Puree of Broccoli Parmesan Soup

Broccoli is a nutritional wonder. It contains a high amount of potassium, which helps maintain a healthy nervous system and optimal brain function, as well as enhancing regular muscle growth. Put it in a blender along with these other fabulous ingredients, and you’ve got a great, tasty healthy soup.


  • 1 medium Onion diced
  • 2 Tablespoons butter
  • 1 LB Broccoli cut into 1 inch pieces
  • ¼ cup flour
  • 1 quart Chicken stock
  • 1 cup heavy cream
  • Salt and pepper
  • 1 cup Parmesan


In a heavy bottomed soup pot sauté the onion and butter until translucent.
Add the broccoli and cover. Steam until tender.
Add the flour and stir for 2 minutes.
Add the stock and simmer for 10 more minutes.
Puree in a bender when it has cooled down a little.
Add cream, parmesan and season with salt and pepper. Reheat if necessary.


Substitute or add other cheeses like cheddar or Monterey jack and/or
Add additional herbs or spices
