Judge Hayley’s Mother-Approved Tequlia Lime Mexican Soup
This is an easy and flavorful mother-approved soup recipe for a quick dinner (12 minutes!) when you’ve got a lot going on. Perfect for the dorm room hot plate or crock pot! It has all of the flavor and none of the alcohol.
Helpful hints and tips: Always have some rotisserie chicken in your dorm room/apartment refrigerator for a quick snack and to use to quickly assemble a healthy meal.
Ingredients
- 2 oz. Jalapeños
- 2 cups shredded Chicken
- 1 jar (16 oz) “Help From Hayley” Tequila Lime Cooking Sauce
- 1 ea. Avocado; diced
- 3 cups Chicken Stock
- 2 T. Cojita Cheese; crumbled
Directions
In a sauce pan over medium high heat combine jalapeños, Tequila Lime cooking sauce, chicken stock and chicken (I use rotisserie chicken). Bring to a simmer until the soup is hot and reaches 165°. Top soup with diced avocados, crumbled cojita cheese (Mexican white cheese). If desired garnish with a lime wedge and sprig of cilantro. This is on the table in 12 minutes-YUM!
